Servings: 2

Ingredients
2 pork chops
1/4 of an apple
1 radish
2 slices of ginger
1 teaspoon of Dijon mustard
coconut oil for cooking
salt and pepper to taste

Directions
1. Chop up the apple, ginger and radish into small cubes
2. Combine the chopped ingredients into a small bowl and mix well; this will be your salsa
3. Coat a frying pan with a splash of coconut oil (about 1/2 tablespoon)
4. Fry pork chops until they are fully cooked
5. Plate pork chops
6. With a spoon drizzle some dijon mustard over the pork chop and top with salsa (can also be served on the side)
