Ingredients
3 medium sized sweet potatoes, thinly sliced into circles
2 tbs olive oil
1 tsp kosher salt
1/2 teaspoon freshly ground black pepper

Directions
1. Preheat oven to 450°.
2. Toss potatoes, oil, salt, and pepper together on a baking sheet.
3. Roast, flipping occasionally, until tender and browned, about 35–45 minutes.
